This is how Nigiri is done. The kitchen is attached to the sister fish market, and the quality of the fish is superb.
The chefs take great care in selecting, preparing and plating
the fish, and the sake selection makes for a wonderful pairing. It's one of the better places I've been to in any country and I'll happily come back, despite it being in the far-end of nowhere :)
We did the omakase with the sake pairing at Hokkai. The atmosphere and setup isn’t exactly what you expected from a omakase, but nonetheless it was the freshest sushi I ever had in the Netherlands. The fish was just o so good! Just as they described, they are simple traditional but truly well done. The price was more than reasonable, and we will back for sure anytime soon.
The fish is very fresh and you can taste that immediately. I like the fact that they also have chutoro and otoro instead of just Maguro. The otoro really melts in your mouth. Other cooked dishes such as mackerel and cod was really tiny and not what I have expected. The service is good but the ambiance could be better. It's a great place for fresh sushi and sashimi definitely!
I was disappointed. I went to Hokkai kitchen every year since 2020. Tempura was over fried: the skin was way over cooked and was hard not fluffy crunchy. The sauce for tempura tasted like McDonald curry/barbecue sauce. Sashimi is the thinnest I have ever had and it was not as fresh as before. Nigiri’s rice was not wrapped firm enough but taste is okay. The menu is like a two page A4 paper staples together: much less choices and way higher price(not sure on the exact price). O toro, Chutoro not fresh and do not have enough fat. My first time experience in Hokkai was a 5 star definitely even with not so fancy renovation and surrounding. Now it is a good renovated but commercialize restaurant with focus on making profit with a food quality sacrifice.

Everything is delicious. Understated little place but an awesome experience overall.
OMG, OMG, OMG! So fresh, so incredibly high quality, each bite an explosion of taste. If you’ve seen my other reviews, I’m rarely at a loss for words - but this simply blew us away… Better sushi or sashimi you’ll only find in Japan - if at all.
The backstory: Major fish whole saler sends son to Japan for training, son falls in love with Japanese culture and a lovely Japanese wife - and brings back authentic Japanese cuisine to Netherland’s biggest fishing harbour, right into the heart of the freshest catch.
You’ll need to reserve - but can also take frozen Japanese fish delicacies home - some of the fare that’s otherwise going to Europe’s best sushi restaurants.
Simply incredible.
You won't want to eat tuna sashimi anywhere else after tasting it here! Food is absolutely delicious, staff is very kind and helpful. The location is not very atmospheric but it's nice enough on the inside. Definitely go here if you can help it!
